The Traditional Cuts

Here are the traditional cuts of chicken. Please ask our butchers for more advice on cooking tips and different cuts of meat, we are always happy to answer any questions…

  1. » Breast

    We take this cut off the bone and leave it whole. This is known as a ‘fillet’.

  2. » Wings

    This cut is a surprising treat, they go crispy when roasted, grilled or barbecued.

  3. » Drumsticks

    This cut is a favourite for barbeques, and great in a lunch box.

  4. » Thighs

    This cut is often recommended by the TV chefs for its taste and texture.

  5. » Legs

    We take this cut off the bone and fill it with one of our home made stuffings.

Millins Lemon Roasted Chicken

Toss some chicken drumsticks and thighs and some whole garlic cloves in olive oil, lemon juice (throw in the whole lemon quarters too once you have squeezed them) and salt and pepper. Roast until golden brown, occasionally turning, and add some torn fresh basil before serving with salad.
